Tuna Noodle Salad

That infamous casserole from our youth has been updated to become a delicious, cool, refreshing creamy salad. 

Perfect on those hot, steamy Summer days. 
Served as a side dish or even the Main dish, this salad is creamy, crunchy and flavorful!

1 lb. elbow noodles, cooked and drained
1 2oz. jar Pimentos, drained
4-6 Green onions, green part only, sliced
1 carrot, peeled and shredded
4 celery stalks, chopped
1/2 cup Mayonnaise
1/2 cup Sour Cream
2 tbsp White Wine or Cider vinegar
1-2 tsp Black Pepper

  1. Combine the first 5 ingredients in a large bowl. 
  2. In a small bowl whisk the Mayo, sour cream, Vinegar, and pepper together. 
  3. Pour over the ingredients and toss to coat. 
  4. Taste and adjust seasonings (S & P)
  5. Chill and serve!
