Our family did, although my 15 and 17 year old daughter balked at having an egg hunt.
Ahem...I don't blame them.
Of course, this means that we have plenty of leftover ham. First up--Ham & Noodle Sour Cream Hot dish (Casserole to non-mid westerners!)
This tasty dish makes using ham a real treat and everyone loves a creamy noodle dish!

Easy, creamy and just plain yummy!!
Ingredients:
2 cups cooked, chopped Ham
2 cups pasta-I like to use elbow noodles for this dish
3 tbsp butter
3 tbsp flour
2 cups chicken or veg. broth
1 cup sour cream
1-2 tsp Worcestershire sauce
1 cup frozen peas
1 tsp Garlic Powder and Onion Powder
Salt & Pepper to taste
Directions:
- Bring a large pot of water to boil and cook the elbows for about 10 mins. or until tender. Drain.
- Meanwhile, melt the butter in a large sauce pan and sprinkle in the flour and whisk and cook for another minute.
- Pour in the broth, while whisking and heat to a low boil. Whisking, until mixture thickens. Voila! Veloute Sauce!!
- Take off the heat and stir in Sour Cream and Worcestershire sauce, garlic and onion. Season to taste with S & P.
- Add the ham to the large pot of noodles along with the Peas. Pour the sauce over and stir to combine.
- Heat on low heat to desired temp. or place in a buttered casserole dish and heat in a microwave or oven.
**The next day I added about a 1/3 cup of minced Dill Pickles and 2 heaping tbsp of Mayo and guess what??? Ham Noodle Salad!! It was yummy.

DeleteYum! I wish I would have found your recipe yesterday when I was trying to come up with something to do with that leftover ham! Saving this for when I get some out of the freezer! Hope spring is more on your side in Iowa than it is over here in Wisconsin. Winter is back!
