Yesterday was another 80 degree day that turned into a torrential downpour.
Sigh...so much for grilling the chicken.
Instead I opted to make this delicious version of BBQ chicken. I'm thinking I may just actually prefer BBQ chicken
Not only is this easy, it only used 2 ingredients.
Yes, I said TWO Ingredients. Chicken and your favorite bottled BBQ sauce. That's it!!
Start off by sauteing your chicken on the skin side until it is nice and browned, then place on a rack over a foil lined (easy clean-up!, folks) sheet pan.
Next roast in a 375F oven for 15 minutes.

Then roast for another 30-40 minutes or until chicken is 160F and juices run clear. Brush once again all over with the remaining BBQ sauce and return to the oven for 5 minutes.
See, the chicken is moist, yet flavorful and the sauce is sticky and not burned.
Ingredients:
2-3 lbs of cut up chicken, bone in, skin on (I used 2 large breast and 2 legs)
3/4-1 cup BBQ sauce
Directions:
- Preheat oven to 375F. Line a sheet pan with foil and place a rack over.
- Place chicken pieces skin side up and sprinkle with salt.
- In a large heavy cast iron or saute pan heated to med. high, place chicken skin side down and cook for 5-8 minutes or until golden brown. don't crowd the pan and don't flip or move chicken. Do in batches if necessary.
- Remove to the rack and roast for 15 minutes.
- Brush all over with BBQ sauce and return to the oven. Roast for 30-40 minutes or until chicken reaches 160F.
- Brush again with remaining BBQ sauce and roast in the oven for 5 minutes.
