Country Stuffing Casserole

This casserole will make you jump for joy and your family ask for more!
It can be made with leftover Ham, Turkey, Chicken, Beef. I have even made it with frozen chicken patties that I thawed and diced.



This dish is like your favorite green bean ccasserole on steroids, it's that tasty. By adding the layer of meat and then topping that with a simple stuffing, it makes this dish sing!

And don't leave out the French Fried onions, they really added that crunch that the dish needed. 


I'm posting this now because with Easter ending, I have a large amount of leftover ham. And yes, I will make scalloped potatoes and ham and then eventually Navy Bean Soup. But first I plan on making this tasty dish!!

Ingredients:
2 cups of cubed or diced leftover or cooked meat-your choice
1 6oz. box of your favorite Stuffing mix, prepared per the package
1 can of green beans-drained
1 4 oz. can of sliced mushrooms-drained (using these are opt.)
1 can of Cream of Chicken, Mushroom or Celery soup, mixed with 1/2 can of water. 
1 small container of French Fried Onions or about a cup

Directions:
  1. Preheat oven to 375F and non-stick spray a 2 qt. casserole dish. 
  2. Layer in the meat, gently layer the prepared stuffing on the meat. 
  3. Spread the drained beans and then the mushrooms, cover all with the diluted Cream soup.
  4. Cover the dish-mine had a lid-with foil, and bake for about 30 minutes, until bubbly and heated through. 
  5. Remove cover or foil and sprinkle the French Fried Onions over the top. Return the casserole to the oven for about 8 minutes until the topping is crisped up.
  6. Let it cool slightly and serve.

  1. I am getting ready to make something very similar to this tonight for dinner... My husband grew up eating it called Ruthie's Green Bean Casserole this looks amazing!!! Now I am looking forward to this even more for dinner. :)
